Ingredients
- 3 eggplants
- 2 cloves garlic
- 1 bunch parsley
- extra virgin olive oil
- salt
- to taste pepper

Steps
Wash the eggplants, trim them, and cut them into cubes.
Sauté the garlic with plenty of oil in a non-stick skillet, then add the eggplants and quickly flavor them over high heat.
Add salt, lower the heat a bit, and cook for another 15 minutes, stirring often.
The skillet eggplants are ready; just add a bit of chopped fresh parsley and serve them.
