You know well that I love transforming recipes, even making savory versions of every dessert.
Ham and scamorza are a very tasty main dish, fried little balls shaped like pumpkins with a dough similar to pizza… rather than the usual mini pizzas, they can be presented for a fun and different dinner.
For those who, like me, don’t love frying (but once in a while is fine), you can bake them, and they will be just as good.
For this recipe, I filled these bomboloni with ham and scamorza, but you can change the filling using whatever you prefer or have on hand, like salami, mortadella, provola, mozzarella..
If you want to use mozzarella, it’s important to choose the pizza type, in a block, which will remain dry and stringy.
The savory bomboloni with ham and scamorza can also be made in mini versions, perfect for a birthday buffet or an appetizer, obviously changing the shape.
Recipe for savory bomboloni with ham and scamorza, tasty with a melting filling, fried or baked for a delightful dinner. I’ve also tried cooking them in an air fryer, and they turn out great.
With this simple recipe, you can get creative by making fried bombs for all tastes: with ragù, or even vegetarian. The more, the merrier!

Ingredients
Savory fried pumpkin-shaped bomboloni
- 1 3/4 cups all-purpose flour (plus extra for the work surface)
- 1 3/4 cups Manitoba flour
- 3.7 oz water (70°F)
- 3.7 milk (70°F)
- 1 tsp sugar
- 1 oz olive oil
- to taste salt
- 1/4 fresh yeast
- 6 oz cooked ham
- 7 oz mozzarella (for pizza in a block, or provola or scamorza)
- to taste peanut oil

Steps
Savory fried pumpkin-shaped bomboloni
To prepare the fried bomboloni, sift the flour into a bowl, add the sugar, and dissolve the fresh yeast in half a cup of water taken from the total.
Gradually add the water and milk (make sure they are not too hot, or they will block the rising) the oil and lastly the salt. Work it a bit.
Work all the ingredients until you get a soft but consistent dough, knead it for at least 10 minutes on the work surface.
“You can also knead with a stand mixer or the Bimby”.
Put the obtained dough back in the floured or oiled bowl, cover with cling film, and let it rise in a warm place (ideal temperature 80°F) for about 2 hours or until doubled.Until it doubles in size.
(You can place it in the turned-off oven with the light on), in about 2/3 hours it will rise.
When the dough is ready, take it, roll it out on the work surface, form equal balls, flatten them between your hands and insert a little mozzarella and cooked ham in the center.
(If using mozzarella, use the dry type that does not leak whey).
Close and form balls again.
With kitchen twine, divide it into 6 segments to recreate the classic pumpkin shape!
Cut squares with parchment paper, where to place them.
Place all the bomboloni under a towel spaced apart.
Let rise until doubled.
When the savory bomboloni have doubled in size.
Fry them in a wide deep pan with plenty of hot oil 2/3 at a time not more to not lower the oil temperature.
(Oil at 340°F do not exceed the smoke point).
Fry, checking the color by turning them over.
Once cooked, place the bombolini on paper towels.While (For air fryer cooking the savory bomboloni in the oven brushing the surface with yolk and milk at 350°F for 15 – 20 minutes).
Then serve them, sprinkling with a pinch of salt.
Enjoy your meal.
Advice
The filled balls are perfect for a snack or an exceptional dinner with friends. A great snack for buffets.
Serve them warm for even more taste. They can also be filled with cheeses like gorgonzola or with stracchino, etc.
