Ingredients for the Savory Pie with Vegetables
- 1 puff pastry
- 1 eggplant (large)
- 3 zucchini
- 2 peppers (1 yellow 1 red)
- 8 oz mozzarella
- to taste salt
- to taste extra virgin olive oil
- to taste milk (for brushing)

Steps for the Savory Pie with Vegetables
To prepare the savory pie with Grilled Vegetables, start by washing all the vegetables thoroughly and drying them.
Then remove the ends from the eggplants and zucchinis and cut them into slices about 1/4 inch thick.
Remove the stem, seeds, and white filaments from the peppers and cut the flesh into strips about an inch wide.
Start grilling the vegetables.
First, the peppers, which will cook for about 5 minutes per side, then the eggplants and zucchinis, which will be ready after cooking a couple of minutes per side.
Salt all the vegetables and transfer them to a plate to cool.
(I preferred to remove the skin from the peppers, but you can leave it if you wish.)
In the meantime, unroll the puff pastry and transfer it with the provided parchment paper into a round pan of 9-10 inches in diameter.
Trim the edges of the puff pastry and prick the bottom.
When the vegetables are cool, start distributing them in the pan, beginning from the edges, alternating the vegetables to create a pleasant color contrast.
Place slices of mozzarella on top.
Repeat with another layer of grilled vegetables.
Decorate with intertwined strips of puff pastry.
Brush with a bit of milk.
Place the preparation in the oven at 350°F for 40 minutes.

Tips
To best savor the crispness of the puff pastry, I recommend consuming it on the same day, if you have leftovers, store them in the refrigerator and reheat them when ready to eat.
