I chose a pack of mixed fresh mushrooms, but champignons are also fine.

I used yellow-fleshed potatoes, which are considered the firmest, most compact, and they are also low in starch.

Ingredients for the Savory Pie with Potatoes and Mushrooms

  • 3 potatoes
  • 1 puff pastry
  • 10.6 oz mushrooms (mixed or champignon)
  • 6 slices smoked scamorza cheese
  • 2 sprigs rosemary
  • to taste extra virgin olive oil
  • 5 cherry tomatoes
  • golden onion
  • salt
  • pepper
  • 1 tablespoon milk
  • to taste sesame seeds
  • Half shot glass dry white wine

Steps for the Savory Pie with Potatoes and Mushrooms

  • Wash the potatoes, peel them, and cut them into cubes.
    Cook the potato cubes in boiling water for 12-15 minutes from the start of boiling, then drain and set aside.

    (Cooking times may vary depending on the size of the potato cubes).

    Drain the potatoes and let them cool slightly.

    In the meantime, clean, wash, and slice the mushrooms.

    In a pan, heat a drizzle of oil and add the sliced mushrooms.

    Deglaze with half a shot glass of white wine, adjust salt and pepper.

    Add 5 cherry tomatoes cut into wedges.

    Cook the mushrooms for about 10 minutes.

  • In a large bowl, mix the now-cold potatoes with the mushrooms.

    Add some finely chopped rosemary.

    Mix very well.

  • Unroll the puff pastry and place it in a baking tray with parchment paper.

    Pierce the entire roll with a fork to prevent it from swelling during cooking.

    Place the slices of smoked scamorza cheese.

  • Now pour the potatoes and mushrooms.

    Fold the edges, brush with a little milk, and sprinkle with sesame seeds for a rustic effect.
