- 2 puff pastry (round)
- 4.2 oz smoked salmon
- 3.5 oz cream cheese (or robiola)
- as needed arugula (or lettuce)
- 1 egg yolk
- 1 milk (tablespoon)
- as needed poppy seeds (or sesame)

Steps
Savory Puff Pastry Croissants with Salmon
Roll out the first sheet of puff pastry and place the second on top so that the pastry disks are touching.
Cut the two overlapping disks into 12 wedges.Roll each triangle starting from the base and proceeding to the tip.
Slightly bend the roll to curve it into a croissant shape and repeat for all triangles.
Place the croissants on a baking tray lined with parchment paper, keeping them a bit spaced apart, then brush the surface with the egg yolk beaten with a tablespoon of milk.
Decorate with a sprinkle of poppy seeds
(You can use any seeds you prefer, or none at all)
Bake in a preheated oven at 375°F for 15 minutes and take them out.
Once baked and slightly cooled, cut them in half and spread the cheese on the bottom half.
Fill each croissant with a piece of salmon, then complete with some arugula and close them with the other half.The puff pastry croissants with salmon are ready.
Serve them on a nice tray or cutting board and enjoy!

Tips
This dish can be stored in the refrigerator for about 1 day after preparation. However, it’s advisable to freeze the empty baked croissants if you don’t plan to use them the same day. Just thaw them at room temperature for a few hours before filling or warming them in the oven.
