Tips

Use eggs and milk at room temperature. This helps the ingredients mix better and ensures more even leavening.

Don’t Overwork: Once the dry ingredients are added, mix the dough just until it is homogeneous. Overworking develops the gluten and can make the base less soft.

Exact Measurement: For a soft and moist base, measure the oil and milk with a graduated measuring cup to ensure the quantities are precise.

As with all cakes, before removing from the oven, insert a toothpick in the center. If it comes out dry, the base is cooked.

Storage

The soft base, once cooked and completely cooled, can be stored wrapped in plastic wrap at room temperature for 2-3 days, or frozen and thawed as needed.

Notes.

If you need to serve the tart filled with fresh ingredients (like cold cuts and spreadable cheeses), it’s best to assemble it just a few hours before serving, to avoid the base becoming too soft.

Filling Tips

Two-Tone Filling: Divide the star in half with a strip of spreadable cheese. Fill one half with mushroom cream and the other with pepper cream for a contrasting effect.

Crown Effect: Fill the five “peaks” of the star with five different fillings (e.g., chopped olives, smoked salmon, sun-dried tomatoes, pesto, arugula), leaving the inside empty or filled uniformly.
