  • 3 zucchini (large)
  • 2 eggs
  • 3 tablespoons parmesan (grated)
  • as needed flour
  • as needed breadcrumbs
  • salt
  • as needed extra virgin olive oil

Super Crispy Zucchini Rings

  • Cut the zucchinis into fairly thick rounds and remove the pulp using a small pastry cutter, creating rings.

    (Keep the inner part aside for other recipes).

  • Place some flour on a plate.

    Beat the eggs with a pinch of salt.

  • Bread the rings first in the flour, coating well on all sides, then in the beaten eggs, and finally in the breadcrumb and cheese mixture.

  • Place them on a baking sheet lined with parchment paper, drizzle with a little extra virgin olive oil, and bake in a preheated convection oven at 356°F for about 20/25 minutes, until golden.

    (They should be turned halfway through cooking).

    Alternatively, cook them in an air fryer at 338°F for 16/15 minutes, turning them halfway through, until golden.

    Alternatively, you can fry them in plenty of vegetable oil.

    Always check both the oven and air fryer as cooking times may vary.

Tips

Ensure all zucchinis are fully breaded.

For a stronger taste, you can replace the classic grated cheese with a more robust and flavorful one like pecorino.

Additionally, you can make a spicy version by adding powdered chili and mixing it with the breadcrumbs and grated cheese.

You can store zucchini sticks for 2-3 days in the refrigerator, reheating as needed in the oven or microwave.
