Ingredients

Turkey Roll-Up Skewers

  • 4 slices turkey (or large chicken)
  • 2 zucchini
  • 4 slices cooked ham
  • to taste fontina cheese (or Galbanino or cheese of choice)
  • to taste breadcrumbs
  • salt
  • pepper
  • to taste extra virgin olive oil

  • Meat Tenderizer
  • Mandoline

Steps

Turkey Roll-Up Skewers

  • Wash a zucchini and using a vegetable peeler or a mandoline, slice it into very thin slices, set aside.

  • Lay the turkey breast slices on the cutting board and pound them to make them slightly thinner and tender.

    Season with salt and pepper and place a slice of zucchini on top.

  • Continue with a slice of cooked ham and a piece of cheese.

    Roll the slices to form a roll-up that has the outer side breaded.

    Place the roll-ups side by side on a cutting board.

  • Insert the wooden skewers parallelly trying to keep all 4 roll-ups together.

  • At this point, with a sharp knife and a long blade, cut between each skewer to form 4 skewers that are approximately the same thickness.

  • Heat a little oil in a large pan and place the skewers in it, cooking them over medium heat until they are well browned. Turn them over and cook until golden on the other side too.
    Season with salt and pepper and serve immediately with seasonal vegetables.
