A tasty and very simple main course to make.
Instead of turkey, you can use chicken if you like it more, or veal slices.
Turkey meat is, along with chicken, the most versatile meat in cooking precisely because of its delicate flavor.
I stuffed the roll-ups with cooked ham and cheese sticks.
I cooked the turkey and peas separately, then combined them in one pan to better mix the flavors.
Accompany this dish with some slices of bread to soak up the sauce and enjoy a healthy and nutritious meal.

Ingredients for Turkey Roll-Ups with Peas
- 1.3 lbs turkey breast
- 5 slices cooked ham
- to taste cheese (grana, pecorino, provolone.)
- to taste all-purpose flour
- 14 oz frozen peas
- 1 clove garlic
- Half onion
- to taste extra virgin olive oil
- chopped parsley
- Half cup dry white wine
- salt
- pepper

Steps for Turkey Roll-Ups with Peas
First, remove any fatty parts or cartilage from the turkey slices.
Flour them and place them on a tray.
Place a bit of cooked ham and a cheese stick on each turkey slice, roll the meat to form the roll-up, and secure it with toothpicks.
Continue like this until all the ingredients are used up.
Pour some oil into a pan, add the garlic clove and let it brown.
Place the roll-ups inside and let them brown well on all sides.
Deglaze with the wine and let it evaporate well.
Salt, pepper, and continue cooking, adding a splash of water when needed.
In a saucepan, pour some oil, add the chopped onion and let it brown.
Add the peas, salt, pour in some water and continue cooking until they are tender, adding a bit of water when necessary.
“Tip: if you like, you can add some cherry tomatoes cut into wedges”.
When both the roll-ups and peas are cooked, combine them in a single pan.
Only at the end add the chopped parsley and let them season together for a few minutes.
Turn off and serve hot.

Advice
You can store them for one or two days at most in the fridge, closed in an airtight container.
Although ideally, of course, you should consume them immediately, if you have no alternative and have used only fresh ingredients, you can also freeze them.
