Turkey slices pizzaiola. An easy, tasty, and hearty main course, perfect for everyday cooking.
Loved by both adults and children, this recipe is colorful and irresistible, thanks to the gooey cheese and the taste of the accompanying cherry tomato sauce, which keeps the meat tender and moist just right.
I used turkey meat, but chicken breast slices, or veal or beef slices, are also fine. Use whichever you prefer. But make sure they are very tender.
You can also use the sauce to dress pasta, but since there is cheese, I suggest some good fresh bread for a rich, very rich “scarpetta” (sopping up sauce with bread): you will delight!
In this recipe, some use capers, some don’t: I add a few green olives, I find it contrasts perfectly with the sweetness of the cherry tomatoes giving the dish a nice extra kick, but you try the various versions and tell me which you prefer.
And I must admit that I was also very happy to satisfy my family: the slices are super quick to prepare and accompanied by a few slices of bread, to make a delicious and indulgent “scarpetta,” they allow us to prepare lunches or dinners without too much effort!

- 1.3 turkey breast (or chicken breast or veal)
- 3 tablespoons flour
- 1 cup oz cherry tomatoes
- 7 oz tomato puree (or tomato pulp)
- as needed capers (optional)
- as needed taggiasca olives
- oregano
- as needed latteria cheese (or mozzarella)
- 1.4 oz parmesan cheese
- as needed extra virgin olive oil
- salt
- leaves basil
- 1 clove garlic

Steps
Turkey Slices Pizzaiola
Place the turkey slices in a bowl, add the flour and salt, and mix with your hands to coat all the meat with flour.
Heat the oil in a non-stick pan and add the turkey slices, cook for 5 minutes, turning the slices halfway through cooking.
Set the turkey aside and keep it warm.
Meanwhile, take the pan where the meat was cooked, pour in the oil with a garlic clove and a pinch of salt, then add the cherry tomatoes cut in half and a bit of oregano, and cook for 5 minutes.
Add the tomato pulp, stir and cook for another 5 minutes.
Remove the garlic clove and add the olives and capers.
At this point, add the chicken to the sauce, stir, and cook for another 5 minutes with the lid on.
Finally, arrange the turkey slices and stir them, sprinkle with grated cheese and cover with cheese slices, turn off the stove, put on the lid, and wait for it to melt nicely.
To speed up the process, you can turn on the stove for a couple of minutes.
Garnish with a few basil leaves and serve!

Tips
This meat dish is excellent when freshly made, very tender and with gooey cheese. However, we can cook the chicken in advance, reheat it and then add the cheese or mozzarella at the last moment.
If there are leftovers, store them in the refrigerator in an airtight container and then reheat them in a pan or microwave: the mozzarella will become gooey and super delicious again!
