And that’s exactly how these almond and candied cherry cookies are: adorable, easy to make, delicious, and they keep for a good number of days. They are perfect to enjoy alone or with company, sipping coffee or tea, between chats. Wrapped in clear paper and tied with a bow, they make a lovely gift idea. To make them even tastier, almond cookies with candied cherries can be made richer by adding a pinch of cinnamon to the dough. The intoxicating aroma they will release while in the oven will surely captivate you. Crispy when freshly baked, they become soft the next day and, in either case, will tempt the palate of anyone who tastes them.

Ingredients for the Almond and Candied Cherry Cookies

  • 1 1/3 cups almonds
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1 vial almond flavoring
  • 2 tbsp sugar (for coating)
  • 1 egg
  • as needed candied cherries
  • 1 tsp baking powder

What You Need for the Almond and Candied Cherry Cookies

  • 1 Food processor
  • 1 Bowl
  • 1 Baking sheet
  • Parchment paper
  • 1 Small bowl

Method for Almond and Candied Cherry Cookies

  • In this recipe, the almonds are used with their skin and ground with a good food processor or, if unavailable, with a coffee grinder.

  • After placing the almonds and granulated sugar in the processor, run the appliance for a few seconds until the two ingredients turn into flour.

  • Do not leave the almonds in larger bits, as the dough might become mushy and the cookies could flatten too much during baking.

  • Empty the mixture into a bowl and add the flour, baking powder, almond flavoring, and the egg. Knead until obtaining a firm and sticky dough.

  • Line a baking sheet with parchment paper. Place some granulated sugar in a small bowl and begin preparing the cookies.

  • Take small amounts of dough about the size of a walnut, roll them between your palms to form a sphere.

  • Roll the cookie in the bowl of sugar, making sure it sticks to the entire surface, except the part that will rest on the baking sheet.

  • Arrange the cookies on the parchment paper, spacing them apart as they will puff up during baking. Place a whole or half candied cherry on each cookie, according to your preference.

  • Bake in a preheated oven at 325-340°F (160-170°C) for about 15 minutes. Naturally, times and temperatures may vary based on your oven, so adjust accordingly.

  • Once baked and removed from the oven, the cookies will be soft, and you shouldn’t try to remove them from the sheet. Just wait for them to cool down.

  • Store in a tin box; they will keep for several days, provided they don’t get eaten immediately.

  • The Almond and Candied Cherry Cookies are ready to be enjoyed.
