Almond Flour Cookies

Almond Flour Cookies are extraordinarily delicious. These are delightful crumbly treats to enjoy on their own, with coffee, or tea. They are also a great gift idea. In fact, they can be placed in a cute box or wrapped in clear paper and tied with a ribbon. To make them, I used a silicone mold that created patterns on the surface, but, if not available, they can be rolled out with a rolling pin and cut with a cookie cutter or a glass if you want them round, or simply cut into squares or rectangles with a fluted wheel. Alone or with company, it will always be a pleasure to enjoy these delicious almond cookies.

Ingredients for Almond Flour Cookies

  • 3.75 cups all-purpose flour
  • 1.5 cups sugar
  • 2.5 cups blanched almonds
  • 4 tbsp lard
  • 3 eggs
  • 2 tsp baking ammonia

What You Need for Almond Flour Cookies

  • 2 Non-stick Baking Sheets

  • 1 Food Processor

Procedure for Almond Flour Cookies

  • For the making of these cookies, you will need almond flour.

  • You can proceed in two ways: buy ready-made almond flour, or make it at home easily.

  • If you decide to turn the almonds into flour yourself, the first thing to do is soak them in hot water for a few minutes, until the skin softens.

  • Then proceed to peel the almonds by lightly squeezing them between your thumb and index finger. Remove the skin and place them on a baking sheet.

  • Dry them in the oven at low temperature, stirring them often. The almonds should not toast, but dry, which is why a low temperature is needed.

  • To turn them into flour, place them along with the sugar in a good food processor. Turn it on and grind into a fine powder. Pour the powders into a bowl.

  • If you have purchased almond flour directly, all this won’t be necessary. In this case, place the almond flour and sugar in the bowl.

  • From this point onward, you can proceed in the same way. Add the all-purpose flour, melted and slightly cooled lard, eggs, and baking ammonia.

  • Work until all the ingredients are incorporated, and if desired, though not necessary, let the dough rest for half an hour.

  • Preheat the oven to 340°F. Take a small amount of dough and press it into the silicone mold, then remove the cookie and place it onto the non-stick baking sheet.

  • Continue in this way, spacing the cookies a little apart as they will puff up a bit during baking.

  • Bake for about 10-15 minutes, adjusting based on your oven. Since thermostats are not precise, the temperature may vary, and it may take more or less time.

  • While the cookies are baking, prepare more to place on a second baking sheet.

  • The cookies are done when they are golden on both the bottom and surface. Gradually detach them and place them on a tray.
