Baked Meatloaf with Potatoes and Carrots

How delicious the Baked Meatloaf with Potatoes and Carrots is and what a fragrance it brings to my kitchen when I prepare it! A second course that can vary based on the ingredients or type of cooking, but always appreciated by both adults and children. Meatloaves at my house are always a hit. Delicious the one in puff pastry crust or the one in sauce. Today I wanted to prepare this baked meatloaf by adding, in addition to the side vegetables, potatoes to the mixture and I must say that the meatloaf with this addition becomes softer and more enjoyable to taste. The breadcrumb gratin, then, gives it that crunchy touch that makes it really very appetizing. But come into the kitchen with me and I’ll show you how to prepare this delight.

Ingredients for Baked Meatloaf with Potatoes and Carrots

  • 10.5 oz ground beef
  • 8.8 oz potatoes
  • 2 eggs
  • 1 bunch chopped parsley
  • 2.8 oz bread
  • 2.8 oz cheese (grated)
  • to taste salt
  • to taste pepper
  • 1 oz breadcrumbs
  • 3.5 oz scamorza
  • 2.8 oz cooked ham
  • 1 carrot
  • 1/2 onion
  • 3 potatoes
  • to taste sage
  • to taste rosemary
  • to taste extra virgin olive oil

  • 1 Pot
  • 1 Potato Masher
  • 1 Bowl
  • 1 Cutting Board
  • 1 Baking Dish

Steps for Baked Meatloaf with Potatoes and Carrots

  • To prepare my Baked Meatloaf, you need to start with cooking the potatoes.

  • They should be washed and put with the skin on in a pot with enough cold water to cover them.

  • Let them cook until they are tender. You can test the cooking by piercing them with a fork.

  • Drain them, let them cool slightly, peel them and mash them with a potato masher, collecting the puree in a bowl.

  • The potatoes can also be cooked for about 7 minutes in the microwave, piercing the skin before baking to prevent them from exploding.

  • You can peel them before mashing, but for those who don’t want to do this, I want to remind you that they can be put in the potato masher with the skin on, as it will not come out through the holes.

  • Put in the bowl with the potatoes, the minced meat, eggs, grated cheese, chopped parsley, and crumbled bread with hands or, for a finer grain, with a food processor.

  • Season with salt and pepper to taste and mix until you get a soft dough. If the mixture turns out too wet, add a little more bread and cheese; otherwise, if it is too dry, help by adding a drop of milk and continue mixing.

  • Sprinkle breadcrumbs on a sheet of parchment paper and place the mixture on top. Flatten into a square shape.

  • Stuff with slices of ham and scamorza, trying to leave the edges of the meatloaf free. Roll up the meat, using the parchment paper to help, trying to wrap it tightly.

  • Oil a baking dish and place the tightly wrapped meatloaf inside. Cut the carrot into cubes, potatoes into wedges, and onion into slices.

  • Put the vegetables in a bowl and season with salt, pepper, and a drizzle of oil. Mix well and arrange on the sides of the meatloaf.

  • Add the sage leaves and rosemary sprigs, finishing with breadcrumbs sprinkled both on the meat and the vegetables with a little more oil.

  • Bake in a hot oven for 30-40 minutes, until the potatoes are cooked and gratinated.

  • Remove from the oven, let rest a bit, so the meat regains consistency to facilitate slicing, and serve.
