Baked Potatoes with Onions

What a fragrance in my kitchen every time I prepare baked potatoes with onions! My family can’t wait to sit at the table to enjoy them. A very tasty side dish that I accompany with many second courses. The baked potatoes with onions are crispy and golden outside and soft inside: a delight! To make them even more flavorful, I also add some grated cheese and a little breadcrumbs. An additional layer of these two ingredients on the surface will create that delicious crust, making us eager to eat them. Let’s see together how to prepare these golden and crispy baked potatoes.

Ingredients for Baked Potatoes with Onions

  • 1.5 lbs yellow potatoes (waxy)
  • 1/2 white onion
  • 1 oz cheese
  • 3/4 oz breadcrumbs
  • 1 sprig rosemary
  • to taste salt
  • to taste pepper
  • 2 tablespoons extra virgin olive oil

What You Need for Baked Potatoes with Onions

  • 1 Baking Dish
  • 1 Bowl
  • 1 Wooden Spoon
  • 1 Knife

Steps

For the baked potatoes with onions recipe, it’s better to use waxy yellow potatoes, and if they’re old, it’s preferable. This is because they are drier and release less liquid compared to other potatoes.

  • Peel the potatoes, wash and dry them well with a clean kitchen towel. Place them in a large bowl and cut them into wedges.

  • Clean the onion, slice it thinly, and add it to the potatoes. Add salt, pepper, and rosemary to taste.

  • Sprinkle cheese and breadcrumbs over the potatoes, leaving some for the top. Also, add the extra virgin olive oil and mix well with a wooden spoon.

  • Place the seasoned potatoes in a baking dish and sprinkle over the reserved cheese and breadcrumbs. Bake at 390°F for 20-30 minutes, until well cooked and golden.

  • If the potatoes begin to darken too much before completing the cooking, cover with aluminum foil and continue baking. Enjoy your meal!
