Ingredients for Beer Meatloaf with Skillet Potatoes

  • 14 oz ground beef
  • 2 eggs
  • 1 cup cup cheese
  • 1 cup cup breadcrumbs
  • 1 cup cup scamorza cheese
  • 1 bunch parsley
  • to taste salt
  • to taste pepper
  • to taste milk
  • 1.3 lbs lbs potatoes
  • 7 oz oz onion
  • 1 cup cup beer
  • 1 sprig rosemary
  • 1 bunch sage
  • to taste breadcrumbs (for parchment paper)

What You Need for Beer Meatloaf with Skillet Potatoes

  • 1 Bowl
  • 1 Skillet
  • Parchment Paper

Procedure for Beer Meatloaf with Skillet Potatoes

  • Combine in a bowl the ground meat, grated cheese (pecorino or parmesan according to your taste), breadcrumbs, chopped parsley, salt, and pepper, and begin to mix.

  • Evaluate the consistency of the meatloaf, and if it seems too firm, add a bit of milk, while if it seems too soft, add some more cheese and breadcrumbs.

  • Sprinkle breadcrumbs on a sheet of parchment paper and place the mixture on it. Flatten it to form a square.

  • Sprinkle the surface with diced scamorza cheese, leaving a 1/2 inch border.

  • Roll up the meat on itself, with the help of the parchment paper, to create a sausage. Seal the sides and tighten it well

  • After adding some oil in a skillet and heating it up, place the meatloaf in and let it brown over high heat on all sides, turning it carefully.

  • Remove the meatloaf, add some more oil to the skillet, and add the onion already peeled and diced, the potatoes cut into 1/2 inch slices, the herbs, and some more salt and pepper.

  • Brown, stirring often with a wooden spoon and, as soon as they are golden, add the beer and bring to a boil.

  • Create some space among the potatoes and place the meatloaf back in the skillet. Cover with a lid and let it cook over moderate heat until the beer has reduced.

  • Turn off the heat, let it cool a bit, then slice the meatloaf and arrange it on a serving plate.

  • Add the potatoes and onion and drizzle the meat with the cooking sauce. Serve the Beer Meatloaf with Skillet Potatoes hot, to enjoy the goodness of the melted cheese.
