Today, in my kitchen, we are making Calzones in the Air Fryer. I love calzones, especially fried ones, but even baked ones are delicious, whether filled with ham and mozzarella or with spinach and ricotta, every time I serve them it’s always a celebration! Since we all know how good fried food is, but overindulging is not really good for our body, today I thought I’d try cooking these delights in my air fryer. Also because I didn’t feel like smelling the scent of frying in the house. The result? Full marks! Soft and tasty, they were appreciated by my husband and kids, so I promised myself to make them again soon. Let’s see the ingredients and procedure to make them.

Ingredients for the Calzones in the Air Fryer
- 2 cups cups semolina flour
- 2 cups cups all-purpose flour
- 3 tbsps tbsps extra virgin olive oil
- 3 tbsps tbsps lard
- 2 tbsps tbsps sugar
- 1 tbsp tbsp fresh yeast
- 2 tsps tsps salt
- 1 cup cup water
- 1/3 cup cup all-purpose flour (for the work surface)
- 14 oz oz mozzarella
- 12 oz oz cooked ham
What You Need for the Calzones in the Air Fryer
- 1 Stand Mixer
- 1 Air Fryer
- 1 Sieve
- 1 Small Bowl
- 1 Bowl
- Paper Towels
- 1 Tray
Preparation of the Calzones in the Air Fryer
In a small bowl, take some lukewarm water from the total and dissolve the yeast along with the sugar. Stir and wait about half an hour, until a froth forms on the surface.
Sift the semolina flour with the all-purpose flour in a rather large bowl. Add the salt, extra virgin olive oil, and lard, and rub with your hands so the flour becomes sandy.
Now, make a well and pour the remaining lukewarm water and the dissolved yeast into the flour. Knead until all the liquid is absorbed. Turn out onto a lightly floured work surface and work until you have a smooth dough.
Divide the dough into 15 equal parts, each piece should weigh about 55 g. Form balls, place them on a clean cloth or a floured surface, cover, and let rise until doubled. It will take 1 to 1.5 hours, depending on the warmth of the environment.
Meanwhile, remove the mozzarella from its preserving liquid, slice it, and place it on a tray where paper towels have been placed, while patting it with more paper towels to dry some of the liquid.
When the balls have risen, take them one at a time and roll them out, forming a disk about 5-6 inches in diameter. In the center, put some cooked ham and shredded mozzarella.
Dip your thumb in water and moisten the edge of the circle, then fold the dough over itself, forming a half-moon. Press the edges well, also helping with the tines of a fork, and place, one by one, on a clean cloth.
Let rise again for about 30-40 minutes, covered with towels. When risen, turn on the air fryer to 356°F and place 2 calzones at a time inside the basket.
Cooking takes about 20 minutes. After the first 10 minutes, open the drawer and turn the calzones over to cook and color evenly on both sides.
The dough can also be made with a stand mixer, following the same order as hand-kneading.
