Today we will talk about my recipe for Cantucci with almonds and pistachios. The Cantucci, cookies that are said to be typically Tuscan, but being very good, have been easily adopted by all regions of Italy. Commonly also called Prato cookies, the Cantucci are dry and crumbly cookies, which are dipped in a sweet dessert wine, called vin santo. Their crunchiness is also due to the fact that they are baked twice to dry well inside; moreover, they can be stored for a long time in a tin box, but I am convinced they will not last long. The recipe I propose today is for Cantucci with almonds and pistachios. Indeed, I wanted to add pistachios to make them even more delicious! Placed in a bag and tied with a ribbon, they can make a nice Christmas gift.

Ingredients for Cantucci with Almonds and Pistachios
- 2 1/3 cups all-purpose flour
- 3/4 cup sugar
- 2/3 cup almonds
- 1/3 cup pistachios
- 2 tbsp butter
- 2 eggs
- 1 tsp baking powder
- 1 tbsp honey
- 1/2 tsp ground cinnamon
- 1 pinch salt

- 1 Stand Mixer
- 1 Baking Tray
- Bowls
- Parchment Paper
Procedure for Cantucci with Almonds and Pistachios
The dough for the cantucci with almonds and pistachios can be made either by hand or with the help of a stand mixer. In the case of hand dough, follow the same order of work as with the mixer.
In the stand mixer’s bowl, place the flour, baking powder, sugar, eggs, honey, and cinnamon and start mixing.
When the dough is soft, empty the bowl onto a work surface and work with your hands.
If it turns out sticky, sprinkle a little flour and continue working.
Spread the dough with your hands, then add the almonds and pistachios with all the peel. The quantity of these two ingredients can vary according to your taste. You can add more of one and less of the other and vice versa.
When almonds and pistachios are incorporated into the dough, divide the mixture into two parts.
Elongate and form two loaves, which should be placed on a baking tray with parchment paper, spaced apart, as they will rise during baking.
Bake in a preheated oven at 350°F (180°C) for 15-18 minutes, being careful as domestic oven temperatures vary. Therefore, adjust according to your appliance’s operation.
Once baked, take out the loaves and let them cool. Cut into slices of 0.6 inches (1.5 cm), place back on the tray.
Bake again for 3-4 minutes, then remove from the oven and wait for them to cool before storing them in a tin box.
Initially, the Cantucci with almonds and pistachios will seem hard, but the next day they will surely be softer.
Serve them, accompanying them with vin santo, where they will be dipped, as per Tuscan tradition.
