Ingredients for Crackers with Salmon and Cheese
- 8 crackers
- 5.3 oz fresh spreadable cheese
- 2.1 oz smoked salmon
- 16 berries pink peppercorns
- as needed orange (two thin slices)
- as needed fennel (fronds)

Procedure for Crackers with Salmon and Cheese
For the preparation of this recipe, the crackers can be left whole or broken in half.
Regarding the cheese, this time I used herb-flavored spreadable cheese, but using plain spreadable cheese won’t change the recipe at all.
Put the cheese in a small bowl and work it a bit with a fork to make it creamier.
With a knife, scoop out the cheese and divide it equally among the crackers, trying to spread it a bit.
Cut the salmon into strips and roll them up to form small roses. Place one on each cracker.
Cut thin slices of orange and make small triangles, to be placed next to the salmon. The orange can be replaced with lemon.
Garnish with pink peppercorns and some fennel fronds. To your taste, the crackers can be placed on a bed of salad.
