- 1 1/3 cups all-purpose flour
- 4 eggs
- 1/2 cup butter
- 3/4 cup water
- 1 pinch salt
- 2 cups milk
- 350 strawberries
- 3/4 cup sugar
- 1/2 cup cornstarch
- 1 tbsp lemon juice
- 3/4 cup whipping cream

Preparation of Ingredients for Cream Puffs with Strawberry Cream
First, you need to make the cream puffs, which can also be prepared the day before. In a pot, pour the water, add the butter and a pinch of salt, and put it on the heat.
When the butter has completely melted and the water is about to boil, throw in all the flour at once.
Quickly stir with a spatula. The flour will immediately absorb the water and become a ball. Continue working until a film forms on the bottom of the pot.
At this point, turn off the heat and wait for the mixture to cool down. Meanwhile, crack the eggs into a dish and add them to the dough one at a time. Do not add the next egg until the previous one is fully incorporated.
Work with the electric beaters, continuing to add the eggs until the end, letting them absorb slowly.
Line the baking sheet with parchment paper or butter it. Put the dough into a pastry bag with a star nozzle and create circles, spacing them apart because they will puff up a lot during baking.
Bake in a preheated convection oven at 390°F for 15 minutes, then lower the temperature to 355°F and let cook for another 6-7 minutes, checking often because temperatures may vary.
Finally, leave them in the turned-off oven for another 10 minutes with the door ajar, keeping it slightly open with the handle of a wooden spoon, so the cream puffs dry well inside.
Let’s move on to preparing the Strawberry and Cream.
Clean the strawberries, cut them into pieces, and put them in a bowl with the sugar and lemon juice and mix.Dissolve the cornstarch in a little milk, while the rest should be heated on the stove. As soon as it nears boiling, add the strawberries and cornstarch.
Continue cooking on low heat and stir until the cream thickens.
Let it cool with plastic wrap in contact, to avoid forming a skin.Whip the cream and mix it with the strawberry cream. Work until it is well blended and becomes fluffy.
Now, there’s nothing left to do but fill the cream puffs. I cut them in half and, using a piping bag, put the cream on both the base and the top, then joined them.
If you want, you can make a hole in the bottom and push the cream in from there, leaving the cream puff whole. I liked showing the nice pink color of the cream inside the sweets.
Gradually arrange the cream puffs on a tray and sprinkle with powdered sugar. What a treat!
