And here they are, Grandma’s genuine Rustic Oil Biscuits, butter-free and perfect for dunking. Ideal for those with cholesterol issues. Grandmothers used to cook like this, with few simple, healthy ingredients: flour, eggs, sugar, and oil. They always knew how to bring out the best from simplicity and genuineness. These biscuits are just like that. Particularly appreciated by my husband, a lover of buttery sweets who unfortunately can’t eat them for health reasons, these healthy treats are among his favorites. I prepare them in abundance and then store them in the freezer. He loves to enjoy them like this, without dunking. And if the night is sleepless, between a TV show and a biscuit, he gets to the next morning.

Steps for Grandma’s Rustic Oil Biscuits
Preparing these biscuits is really very simple. Crack the eggs into a bowl, add the sugar, and the grated zest of an organic lemon.
Beat a little, using a fork. Now add the oil and milk at room temperature or slightly warmed.
Continue beating for a few more seconds. Also add the baking ammonia and mix to incorporate it.
Add the flour little by little, incorporating it into the liquid mixture with the help of the fork.
Once a somewhat coarse dough is obtained, turn the bowl contents onto a floured work surface and knead by hand until a smooth dough ball is formed.
At this point, take pieces of dough and shape them into biscuits, working them with your hands into elongated or round shapes, as desired.
Arrange them onto parchment paper, spaced apart, as they will puff up during baking due to the ammonia or baking powder, if used.
Bake in a preheated oven at 355°F (180°C) for 20 minutes or until cooked and golden on the surface.
Grandma’s Rustic Oil Biscuits are ready to be dunked in milk, but they’re also good to eat on their own.
