Gratin Stuffed Mushrooms are a simple yet delicious dish. They can be used as a tasty warm appetizer or as a side dish to meat dishes. I made a simple filling to stuff them, but you can create fillings with sausage, cold cuts, and whatever your imagination suggests. Generally, gratins use champignons, but any mushroom with a suitable cap for stuffing will work. To clean mushrooms, never put them under water; instead, gently clean them with a damp cloth.

Procedure for Gratin Stuffed Mushrooms
First, clean the mushrooms. Remove any soil, and then rub them with a damp cloth.
Detach the stem from the cap by holding the cap steady with one hand. With the other hand, rotate the mushroom stem until it separates.
Put some oil in a pan along with the peeled clove of garlic. Sauté it. In the meantime, chop the mushroom stems into small pieces.
Add them to the pan and let them brown a little with the garlic. Cut the bread into cubes and place it in a mixer, reducing it to crumbs.
In a bowl, place the contents of the pan after removing the garlic. Add the bread crumbs, grated cheese, pieces of scamorza, chopped parsley, salt, pepper, a tablespoon of oil, and the broth.
Mix all the ingredients well and, using a teaspoon, distribute the filling inside the mushrooms.
Line a baking dish with parchment paper and place the mushrooms with the filling facing up. Finish with another drizzle of oil.
Bake in a traditional oven preheated to 350°F for about 20-25 minutes, depending on the size of the mushroom cap.
You can also bake them in a convection oven, but in that case, the temperature should be 320°F, and the cooking time can vary from 10 to 15 minutes. An air fryer at 350°F for about 20 minutes works well too.
Enjoy the Gratin Stuffed Mushrooms hot, to savor their full softness. Bon appétit!
