Milk Fritters with Potatoes without Eggs

The Milk Fritters with Potatoes without eggs are one of the many fritter recipes prepared for Carnival. The absence of eggs means that these sweets can be safely enjoyed by those who have intolerance to this ingredient. They are also without butter and without lard, hence, a bit lighter, if one can call a Carnival recipe light, where frying is a must. The potatoes, instead, help make the dough softer. Once fried, the fritters can be tossed in granulated sugar, dusted with powdered sugar, or drizzled with softened chocolate spread. The dough also contains a small amount of sugar, so those who do not like overly sweet flavors can enjoy them plain. If desired, the milk fritters with potatoes without eggs can be enriched with grated orange or lemon zest during preparation.

How to Make Milk Fritters with Potatoes without Eggs

  • To prepare Milk Fritters with Potatoes without Eggs, first cook the potatoes. Weigh the potatoes, wash them, and put them with their skins into a pot with cold water.

  • Once cooked, peel and mash them using a potato masher, collecting them in a large enough container, considering the dough will need to rise with the flour.

  • Sift the two flours, add the sugar, salt, vanillin, and the yeast previously dissolved in a little milk.

  • Gradually add the warm milk, mixing the powders with a fork, until you reach a very soft dough consistency.

  • Cover the bowl with plastic wrap and let it rise away from drafts, until the dough has tripled in volume. For rising, you can also put the bowl inside the turned-off oven with the light on.

  • After the time has passed, put plenty of oil in a narrow-bottomed pan and heat to 340-356°F.

  • Scoop half-tablespoon portions of dough and drop them into the hot oil. Do not add too many fritters to the oil, as they could cool the oil, and once they puff up, they’d have little space in the pan.

  • Turn them often, using a slotted spoon, and when the fritters are golden on all sides, remove them from the oil and place them on paper towels.

  • Once cooled, roll them in sugar, placed in a small bowl, and arrange them gradually on a tray.
