Have your butcher cut thin slices, so they cook in just a few minutes. A few steps to create a dish that even children will love. Serve the Palermo-style breaded meat with lemon slices and salad, and you’ll see that a simple recipe will become a hit. If you want, after breading the meat, you can also cook it over moderate heat in a pan or on the grill, without adding any fat. Ingredients for the Oven-Baked Palermo-Style Chicken Cutlet

  • 1.32 lbs chicken breast
  • 1.41 oz grated Grana Padano
  • 2.82 oz breadcrumbs
  • 1 bunch chopped parsley
  • 1 clove garlic
  • 4 tbsp extra virgin olive oil
  • lemon zest
  • to taste salt

What You Need for the Oven-Baked Palermo-Style Chicken Cutlet

  • 1 Bowl
  • 1 Spoon
  • Parchment Paper
  • 1 Baking Tray
  • 1 Knife
  • 1 Chopping Board
  • 1 Brush
  • 1 Grater

Procedure for the Oven-Baked Palermo-Style Chicken Cutlet

  • In a bowl, place the breadcrumbs, grated Grana or other cheese, parsley, chopped garlic clove, and the zest of 1 organic lemon. Mix all the ingredients well with a spoon.

  • Place a slice of chicken breast on the cutting board and brush it with olive oil, but only on one side. 

  • Dip each slice into the prepared breading and press gently to adhere it well, naturally only on the oiled side.

  • Line a baking tray with parchment paper and place the slice of meat on it, well spread out with the breading in contact with the paper. Continue with the remaining three slices.

  • Now that the chicken is on the tray, brush the entire surface with oil, sprinkle the breading on top, and press it gently with your hands to make it stick.

  • Salt to taste and drizzle with a little more oil. Preheat the oven to 392°F and bake for 15 minutes if the slices are thin, or a few minutes longer if they are thicker.

  • Optionally, you can flip the chicken halfway through the cooking time. Once cooked, serve the chicken breast hot with lemon slices and salad.

    You can put it in an airtight container and store it in the fridge for a couple of days. You can also freeze it already prepared, let it thaw at room temperature, and heat it just before serving.

  • Can I substitute chicken with turkey?
