Ingredients for the Pork Loin with Almonds
- 2.6 lbs pork loin
- 1/2 cup white wine
- 1/4 cup olive oil
- 2 1/3 cups meat broth
- 1 bunch onion (medium)
- 3 leaves sage
- 2 leaves bay leaf
- 1 sprig thyme
- 1 sprig rosemary
- 1/2 tbsp honey
- 1 3/4 oz peeled almonds
- 1 tbsp flour
- to taste salt

Preparation of the Pork Loin with Almonds
Almonds can be purchased already peeled, but if this is not possible and you have unpeeled ones, proceed as follows: immerse the nuts with skin in a saucepan with very hot water for a few minutes, drain them, and peel them with a slight pressure of the fingers.
For toasting, just put them in the microwave for 30 seconds, or on a baking sheet and let them dry for about fifteen minutes at a low temperature, stirring them often, or in a small pan on the stovetop at very low heat, turning them continuously to prevent burning.
Once cold, the almonds should be crunchy; if not, continue toasting. Proceed to chop them roughly with a knife or a food processor.
To keep the meat in good shape, tie it with kitchen string, alternatively, you can ask your trusted butcher to do it.
Put a sufficiently large pan on the fire to contain the meat. Pour in the oil and let it heat well. Place the pork loin inside and brown it on all sides over high heat to seal the meat well.
During cooking, it is advisable not to pierce the meat with forks or sharp objects to prevent losing juices. This way the meat will be tender and not at all dry at the end of cooking.
While the meat browns, peel the onion and cut it into small cubes. Add it to the pot and let it just turn golden over moderate heat. Deglaze with the wine and let it evaporate, then add the herbs.
After a few minutes, pour the broth over the meat in small quantities, adding more when the first has almost dried up, and reserving about 1/4 cup to dissolve the flour.
Salt to your liking and cover with the lid. Let cook over medium-low heat for about 40 minutes. After the time has passed, turn the meat without piercing it, add more broth, and cover again.
Let cook for another 40 minutes. Once cooking is finished, remove the herbs and take the roast out of the pot, keeping it warm.
With a mixer, blend the cooking sauce with the onion pieces. In a small bowl, dissolve the flour in the reserved broth, without forming lumps.
Add the honey to the sauce and dissolve it well, then add the flour and mix immediately. After a few seconds, the cooking base will have thickened. At this point, add the almond crumbs and mix well.
Cut the still warm roast into not very thin slices. Put some sauce on a serving dish, place the slices of meat on top, and drizzle with more almond cream.

The Pork Loin with Almonds can also be prepared the day before and left in its sauce. It should be stored in the refrigerator in a sealed container. The next day, when serving, reheat, cut, and prepare the sauce. This is to prevent the almonds, if put in the cooking base much earlier, from losing their crunchiness.
