The Puff Pastry Cake with Jam and Apples is a dessert where the crunchiness of the puff pastry contrasts with the softness of the jam and apples. It’s a last-minute dessert, beautiful to look at, very quick to prepare and capable of releasing that captivating aroma, which immediately pleases everyone. The harmonious contrast between the flakiness of the puff pastry and the softness of the jam and apples, will make this dessert irresistibly delicious. For the filling, I used a generous layer of quince jam that I had previously prepared, but you can use any other jam, such as apricot or peach. Finally, the thinly sliced apples create a scenic covering that is very pleasant. I used Red Delicious apples to add an extra touch of color, but Golden and Renette apples are also fine. You can also add a pinch of cinnamon or some raisins if you like.

Procedure for the Puff Pastry Cake with Jam and Apples

  • Preheat the oven to 392°F and, while it heats, proceed with preparing the Puff Pastry Cake with Jam and Apples.

  • Wash the apples well, dry them, and cut them in half. Remove the core, being careful not to break them.

  • Slice them all to the same thickness and place them on a dish. Now attend to the puff pastry, which should be taken out of the fridge just in time.

  • The thermal shock that the cold pastry will experience upon meeting the oven heat will make it rise well.

  • Unroll the pastry on the oven tray, leaving it on the same parchment paper in which it is rolled.

  • Using a flat dish or lid slightly smaller than the diameter of the pastry, place them on the base and press lightly to leave the mark of their circumference.

  • Now, with a smooth and sharp knife, cut strips a couple of centimeters wide around the mark left by the plate or lid, extending outward.

  • To create the braid, simply turn these strips one towards the right and the next towards the left, crossing them over each other until they’re all finished.

  • Spread the jam all over the inside of the braid, and if it’s very thick, dilute it with a bit of hot water.

  • Arrange the apple slices all around, overlapping them halfway, and fill the central hole with small pieces.

  • Sprinkle the granulated sugar over the fruit and bake for about 30 minutes at 392°F. The time and temperature are indicative because each oven has its own temperatures, so adjust according to your appliance.

  • Take the dessert out of the oven and set it aside for a moment. Soften the honey by putting it in the turned-off oven for a few minutes, then brush it still warm on the entire dessert.

  • This operation will give you a golden and shiny cake.
