Ingredients for Raisin Fritters without Yeast
- 2 cups all-purpose flour
- 6 tbsp sugar
- 2 eggs
- 2/3 cup whole milk
- 4.2 oz raisins
- 1/4 tsp ground cinnamon
- 2.4 tsp baking powder
- to taste powdered sugar (for topping)
- 2 cups peanut oil
Instructions for Raisin Fritters without Yeast
Soak the raisins in warm water in a bowl, covering them by a few inches. Let them sit for about half an hour.
In another large bowl, mix the all-purpose flour with sugar, cinnamon, and baking powder thoroughly. Add the lightly beaten eggs and milk and mix.
Drain the raisins, squeeze them, and coat them in flour placed previously in a plate. Shake off the excess flour and add them to the other ingredients.
Heat a deep pan and pour in the oil. Let it heat well until it reaches a temperature of 340°F.Scoop about half a tablespoon of the batter and drop it into the hot oil (the fritters should be submerged in the oil, so it’s better not to use a very wide pan).
Do not overcrowd the oil with too many fritters, to avoid cooling the oil and preventing the sweet fritters from sticking together.
Turn the fritters often with a slotted spoon, and once they are golden, remove them and allow the oil to drain well.
Place the fritters on paper towels to absorb the excess frying oil.
Allow the fritters to cool before dusting with powdered sugar.

If any are left over, they will be harder the next day. Just put them in the microwave for a few seconds to regain their softness.
