Rice Salad without Mayonnaise

Summer, so much heat and little desire to stay at the stove, especially during the hottest hours. And then, here we have many delicious cold dishes without cooking, or that can be prepared in advance with the cool of the morning. Today’s dish is a first course that we can also consider a single dish. Precisely because it is enjoyed cold, it can be prepared in advance and safely stored in the fridge. Great solution for a picnic, a day trip, to take to work, or for a dinner with friends. The Rice Salad without Mayonnaise can be served in small bowls and become an idea to add to a buffet. This is my version, but you can vary the ingredients and quantities according to your tastes. Ingredients for Rice Salad without Mayonnaise

  • 1.25 cups Arborio rice
  • 2.82 oz green beans
  • 2.82 oz provolone cheese
  • 2.82 oz cooked ham (diced)
  • 1.76 oz hot dogs
  • 1.76 oz green olives in brine
  • 5.29 oz tuna in oil
  • 5.29 oz pickled vegetables (giardiniera)
  • to taste salt
  • to taste pepper
  • sprigs chives
  • 2 eggs (hard-boiled)
  • 1 tablespoon white wine vinegar
  • 1 tablespoon extra virgin olive oil
  • A few leaves thyme

What You Need for Rice Salad without Mayonnaise

  • 1 Pot
  • 1 Colander / Strainer
  • 1 Bowl
  • Cling Film

Preparation of Rice Salad without Mayonnaise

The first thing to do is to cook the rice. Put a pot with plenty of very salty water on the fire and, as soon as it boils, throw in the rice.

  • The water should be very salty because the rice, once cooked, will be washed and lose flavor. Cook the rice for the necessary time, then drain it.

  • Put the strainer under a stream of running water and stir the rice. This is done both to cool it quickly and avoid overcooking, and to wash away the starch released during cooking and have separate grains.

  • Put it in a large bowl and proceed with the seasoning. Cut the pickled vegetables into small pieces, drained from the preserving liquid. Add the previously cooked and al dente drained green beans.

  • Cut the ham, hot dogs, and provolone into small pieces, while the olives can be left whole or cut into slices, as preferred.

  • The tuna, before adding it, must be drained from the preserving oil, while the hard-boiled eggs should be cut into slices or wedges.

  • Season with extra virgin olive oil and, to make the rice salad without mayonnaise more tantalizing, add a tablespoon of white wine vinegar or apple cider vinegar.

  • Finally, add a sprinkle of pepper, the thyme, and the chopped chives. Mix everything well and cover the bowl with cling film.

  • Place in the fridge for a minimum of two hours and mix well again before serving. The rice salad without mayonnaise is ready. Enjoy your meal!
