Procedure for the Savory Charlotte with Ham and Ricotta
Let’s now proceed with the preparation of the Savory Charlotte with Ham and Ricotta. My advice is to prepare the charlotte directly on the serving platter or tray where it will be served, because once assembled, it will be difficult to move.
It can be made either square or round. In the latter case, place a springform ring, the kind that opens, on a plate without the base and assemble the cake inside, cutting the bread slices to fit the spaces.
Remove the crust from the sandwich bread and create the first layer. Meanwhile, prepare the filling by putting the cooked ham in a food processor.
Add the ricotta, which should be very dry (let it drain the night before) and the heavy cream, and mix well.
Divide the obtained cream into three parts and start filling the first layer of slices. Then, layer another bread layer and one of filling, and continue like this (I made 3 layers).
This operation can also be done the day before; this way, the bread will become softer and the cake will compact better.
Shortly before serving, cut other slices of crustless bread into strips the same height as the cake and toast them lightly in a lightly oiled pan.
At this point, remove the ring and place the toasted bread all around, pressing a little so that it adheres to the cake.
Decorate the top with ham rosettes, made by cutting strips of cold cuts and rolling them onto themselves, with stuffed olives and chives.
The decoration can vary to your liking; you can also add pickles, cherry tomatoes, and anything you like.
