- 1 eggplant
- 2 bell peppers
- 1 onion
- 2 potatoes
- 8 cherry tomatoes
- 4 tbsp extra virgin olive oil
- to taste salt
- to taste pepper
- 1 bunch basil
- 1 oz cheese

Preparation of the Tasty Vegetarian Side Dish
Wash the eggplants and cut them into cubes. The eggplants can be used with the skin on, or peeled.
Clean the bell peppers by removing seeds and internal filaments. First, slice them into strips and then into pieces. You can use yellow, red, or green peppers, or all together.
Peel the onion and slice it. Cut the cherry tomatoes in half or, if they are large, into quarters.
Then put the vegetables into a large bowl that can hold them all and start seasoning.
Add the salt, pepper, extra virgin olive oil, cheese, and chopped basil. Mix everything well.
Pour into an ovenproof baking dish and season again with a bit of cheese and a drizzle of extra virgin olive oil.
Bake for 30/40 minutes in a preheated oven at 392°F, turning the vegetables halfway through cooking.
