  • The butter should be used cold, so once it is completely melted, remove it and let it cool.

  • Peel two of the three oranges and remove the white part. Cut them into slices half a centimeter thick and set aside.

  • Crack the eggs into a bowl, add the sugar, and beat with a whisk until it becomes a soft and frothy cream. Add the melted butter slowly.

  • Add the zest and juice of one orange, then also the flour and sifted baking powder, gradually incorporating them with a whisk.

  • Pour the mixture over the oranges and bake in a preheated oven at 392°F for about 40 minutes, adjusting to your appliance’s temperatures as thermostats do not all work the same way.

  • Once the toothpick test is done and you see that the cake is cooked, remove it from the oven, wait 10 minutes and flip the pan onto a serving plate.

  • Remove the parchment paper and brush the surface of the cake with honey, softened by a brief passage in hot water or in the microwave.
