- 12 zucchini blossoms
- 1 1/4 cups all-purpose flour
- 7/8 cup water
- 1 tsp instant yeast for savory preparations
- 1/2 tsp salt
- 3 1/3 tbsp peanut oil

Preparation of Zucchini Blossoms with Instant Batter
The zucchini blossoms must be fresh and with a beautiful bright yellow color. Clean them by removing the growths at the base.
Since in this case, they won’t be stuffed and therefore don’t need to be closed on one side, cut the blossoms all around the base and simultaneously remove the stem and pistil.
Gently wash each blossom, carefully avoiding breaking the petals. Place the blossoms on a paper towel to dry off excess water.
In a deep dish or bowl, place the all-purpose flour. Pour in some water and start working. Add the instant yeast for savory cakes and salt.
Continue adding flour and water, making sure to avoid lumps. The batter should be dense enough and creamy.
Pour the oil into a pan and let it heat. Using tongs, take one zucchini blossom at a time and dip it into the batter, turning it on all sides.
Place the blossoms in the hot oil and let them turn golden. Turn them to the other side and wait for them to become entirely golden.
