How to Make 3-Ingredient Pistachio Cookies

Start by preparing the dough: in a bowl, combine the egg, pistachio spread, and flour. Stir with a spoon until you get a homogeneous mixture, then continue by hand until you form a soft, compact dough.
Take small portions of dough with your hands and form walnut-sized balls. Arrange them well spaced on a baking tray lined with parchment paper.
With the handle of a wooden spoon, create a hollow in the center of each ball, then place the tray in the refrigerator for 30 minutes, so the cookies will maintain their shape better during baking.

After the time has passed, bake the pistachio cookies in a preheated static oven at 340°F for about 12 minutes. They should remain light and soft: once baked, remove them from the oven and let them cool completely on the tray.

  • Once cooled, put the pistachio spread in a piping bag and fill each cookie in its hollow.
    Decorate with chopped pistachios on top… and immediately taste one: they are too good! 😻
