How to prepare the apple and jam tart
In a bowl, I put the eggs, sugar, vanilla extract, and seed oil. With a fork or fingertips, I start to mix the ingredients, then I gradually add the flour and baking powder.
I work the dough until a soft and homogeneous loaf is obtained. I wrap it in plastic wrap and let it rest in the refrigerator for at least two hours: in this way, the shortcrust pastry will be more elastic and easy to roll out.I roll out the shortcrust pastry on the work surface and place it in a 9-inch diameter tart pan, greased and floured. I remove the excess dough from the edges and prick the base with a fork to prevent it from puffing up during baking. I spread the cherry jam leveling it well, then peel the apples, cut them into four wedges, and remove the core. From each wedge, I make thin slices which I arrange in a radial pattern over the jam, completing with a sprinkle of brown sugar. I bake the apple and jam tart in a preheated static oven at 356°F for about 35-40 minutes, until golden. I take it out and let it cool completely before removing it from the mold.
Storage and useful tips
The apple and jam tart keeps perfectly for 4-5 days under a cake dome, at room temperature. I recommend not putting it in the fridge, so the shortcrust pastry will remain crumbly and fragrant as freshly baked.
For a gluten-free variant, you can replace all-purpose flour with a gluten-free cake flour mix, adding a teaspoon of potato starch to maintain the right elasticity.
