The Bimby apple cake recipe is quick, easy and super tasty. It’s the classic soft apple cake that everyone loves, and every time I make it it disappears very quickly—after tasting a slice, you won’t be able to help cutting another. Perfect for a good breakfast but also for a tasty afternoon snack.
Its aroma is unmistakable and every time I make it at home it feels like a celebration! For a delicious and indulgent apple cake, the quality of the apples is very important, after all they are the key ingredient. My favorites are Golden Melinda because they are tasty, with a good balance of sweetness and acidity. 😋
You can make this recipe even without the Bimby, using classic electric beaters—the result will still be wonderful! Let’s prepare it together.

Ingredients for the Bimby apple cake
- 2 Golden apples (Weight without peel and core, and cut)
- 3 eggs
- 1 1/8 cups raw cane sugar
- 8 1/2 tbsp butter
- 2 1/6 cups all-purpose flour
- 1/4 cup partially skimmed milk (or plant-based milk)
- 1 tsp ground cinnamon
- 1 sachet (≈16 g / ≈4 tsp) baking powder (for pastries)
- 1 orange zest
- 1 pinch salt
You’ll need
- Kitchen machine Bimby TM31 – TM5 – TM6
How I prepare the Bimby apple cake
In the Bimby bowl I put the sugar, ground cinnamon and the orange zest and start at speed 6 for 25 seconds to powder them well. I add the eggs, the milk, the butter, the flour and the pinch of salt and run the Bimby for 2 minutes at speed 5, then I add the baking powder and work for 30 seconds at speed 5.
I let the batter rest in the bowl while I clean and slice the apples and butter and flour the pan.
I peel the apples, remove the core and cut them, some into small pieces and some into slices. I mix the batter for 5 seconds at speed 5 then add the apple pieces and run, scraping down, for 20 seconds at speed 1.
I pour the batter into the pan, decorate with the apple slices and bake in a conventional (static) oven for 40/45 minutes.
