- 2 1/2 cups all-purpose flour
- 1/3 cup peanut oil
- 1/2 cup sugar
- 2 eggs
- vanilla bean (or grated lemon zest)
- 1 pinch salt
- 1 cup blueberry jam
You’ll Need
- Bakeware 9-inch tart pan
- Rolling pin
- Plastic wrap
Prepare the Butter-Free Tart
1. In a bowl, beat the eggs with sugar.
2. Add the oil and flavors, then combine the flour with the salt.
3. Knead quickly until you get a soft, non-sticky dough.
4. Wrap the dough in plastic wrap and let it rest in the fridge for 30 minutes.
5. Roll out the dough with a rolling pin and place it in the tart pan.
6. Prick the base with a fork and spread the jam evenly.
7. Use the leftover dough to make strips and create the classic lattice.
8. Bake in a static oven at 356°F (180°C) for about 40 minutes.
9. Let it cool completely before removing it from the pan.
