The chocolate popsicle – sugar-free is the perfect recipe for someone like me who is on a diet 😉 and wants to limit sugar consumption without giving up taste.
They are creamy, delicious, and irresistible, and I’ll tell you something: both my son and husband loved them! Just like many other light recipes I often make – like the sugar-free tarts or the quick cookies without butter and sugar – these ice creams are among my favorite “smart” desserts.
They remind me of the classic Magnum ice cream (which I loved!), but in a lighter and healthier version.
And do you know why they are so creamy even though they’re sugar-free? I’m revealing my little trick: I used guar gum, also known as guar flour.
It’s a natural, gluten-free thickener, rich in fibers and proteins, obtained from the seeds of the Cyamopsis tetragonoloba plant, native to India, China, and Pakistan. In food products, it’s indicated with the code E412.
To sweeten, I chose erythritol, a zero-calorie natural sweetener, while the chocolate I used is Nick’s dark chocolate, sugar-free and gluten-free: perfect for light recipes.
It’s an easy and quick recipe to make: you just need a little patience for the freezing… but trust me, it’s really worth it!

- 1 cup liquid fresh cream
- 2 tbsps erythritol
- 4 tbsps unsweetened cocoa powder (sugar-free)
- 1 tsp guar gum (Guar seed flour)
- 9 oz sugar-free dark chocolate
- 2 tsps coconut oil (or seed oil)
- to taste sliced almonds
- to taste grated coconut (shavings)

Preparing the Chocolate Popsicle – Sugar-Free
In a saucepan, pour the cream, add the unsweetened cocoa, erythritol, and guar gum. Mix well with a hand whisk until all ingredients are dissolved.
Place the saucepan on moderate heat, stirring continuously until the mixture reaches the boiling point. Turn off the heat immediately and let it cool.
Meanwhile, prepare the molds, place them on a rigid tray, and fill them with the mixture. Insert the sticks and place everything in the freezer for at least 6 hours (better overnight).Prepare the coating:
Melt the dark chocolate with coconut oil (or seed oil) in a tall glass or narrow bowl, ideal for dipping.
Take the ice creams out of the freezer one at a time and dip them into the melted chocolate up to the stick level. Let the excess drip off and place them on parchment paper.
If you want to decorate them, do it immediately after dipping in chocolate, before it solidifies: you can use grated coconut, almond slices, or hazelnut granules.
If you don’t eat them immediately, store them back in the freezer.❤️ Try them too!

The popsicles can be stored in the freezer for up to 1 month, closed in an airtight container or individually wrapped in parchment paper and then in a freezer bag.
Avoid leaving them uncovered in the freezer to prevent them from hardening too much or absorbing odors
