The chocolate salami with pasteurized yolks, easy and quick, is a truly delicious recipe that everyone loves: both kids and adults!
It immediately reminds me of Mrs. Vanda, a friend of my mother and the mother of a dear childhood friend. She often made it for her daughters’ snack, and I was happy to take advantage when we played together!
A while ago, rummaging through my mom’s recipe notebooks, I found this delight: right next to Grandma Anna’s apple cake, there was “Vanda’s chocolate salami”! I couldn’t resist: I checked that I had everything and immediately got to work.
The recipe is very simple, requires no cooking, and is prepared in a few minutes. Just let it set in the freezer… and you’re done! I used pasteurized yolks, for a safe and always creamy version.

Ingredients for Chocolate Salami
- 8.82 oz dry biscuits
- 7 tbsp butter
- 0.5 cup sugar
- 60 pasteurized egg yolks
- 0.54 cup unsweetened cocoa powder
- 0.4 cup powdered sugar

- Rolling Pin

Preparation of Chocolate Salami
I coarsely grind the biscuits by putting them in a food bag and rolling the rolling pin until they are crumbled. There should be crunchy pieces left, not powder.
I transfer them to a large bowl, then add the unsweetened cocoa, sugar, soft butter, and pasteurized yolks. I mix carefully until a homogeneous mixture is obtained.
I pour everything into the center of a parchment paper sheet and shape it with my hands, giving it the shape of a salami. I wrap it well, tightening it, and close the sides like a candy.
I let it rest in the freezer for about 2 hours, so it solidifies perfectly.
Once ready, I remove it from the parchment paper, roll it in powdered sugar, and cut it into slices.
What else can I say… it’s perfect for breakfast or as a sweet treat with coffee!
Storage
The chocolate salami keeps in the refrigerator for about 3 days, well-wrapped in parchment paper or in an airtight container. I recommend slicing it only when serving so it remains compact and delicious.
