Dorayaki with Nutella

The Dorayaki with Nutella are delicious treats similar to pancakes; in fact, they are two tasty pancakes like sponge cake, closed like a sandwich and filled with Nutella. In Japan, they are prepared with a sweet sauce called ANKO made from azuki soybeans, and they are the favorite snack of the very cute blue cat from the still popular cartoon DORAEMON loved by our children and also by us! The recipe I prepared has a more Western filling; in fact, I used Nutella, perfect for the joy of our kids and for a tasty breakfast or snack.

Ingredients for Dorayaki with Nutella

  • 2 eggs
  • 1/4 cup sugar
  • 1 tbsp acacia honey
  • 3/4 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp water (room temperature)
  • 1 pod vanilla (seeds)
  • as needed Nutella®

Preparation of Dorayaki with Nutella

  • In the bowl, I mix the eggs with sugar using the hand whisk to dissolve the sugar. I add honey, vanilla, water, and mix. I incorporate the sifted flour and baking powder, and continue mixing with the whisk until a homogeneous batter is obtained.

    I place the non-stick pan on moderate heat, scoop some batter with the ladle and pour it into the pan, when bubbles form, I flip it and cook the other side for a few seconds.

  • I fill the Dorayaki disc with a couple of teaspoons of Nutella leaving the edges clear, then take another disc, cover, and gently press to seal the edges. Breakfast is served! They should be eaten the same day or can be frozen without filling in food bags.

Advice

You can fill them with fruit jam or, as is customary in Japan, with ANKO (a red bean soybean jam called azuki).
