I came up with this recipe for people who want to prepare a Christmas dessert but have very little time, because making pandoro at home is very satisfying but it takes a long time to rise and prepare.
Instead, preparing this pandoro cake is very easy and quick, the ingredients are eggs, milk, flour, and I also added my aromatic mix, and the result was excellent, a delicious cake, perfect for breakfast, with a sprinkle of powdered sugar, for a snack or filled just like pandoro!

Ingredients for the easy and clever pandoro cake
- 1.6 cups all-purpose flour
- 3/4 cup cornstarch (or potato starch)
- 1 cup sugar
- 2/3 cup 2% milk
- 1/2 cup sunflower oil
- 4 eggs (medium)
- 1 tsp aromatic mix for desserts
- 1 packet baking powder
- as needed powdered sugar
You will need
- Mold 750g pandoro
- Stand mixer
- Spatula
Prepare the easy and clever pandoro cake
Work in the stand mixer fitted with a whisk and at medium speed, the eggs with the sugar until the mixture is light and frothy. (If you prefer, use electric beaters).
Lower the speed and slowly pour in the sunflower oil, milk, and the aromatic mix, continue to work always at low speed.
Remove the whisk and insert the spatula, then incorporate the flour, cornstarch, and baking powder sifted together and keep working to combine the ingredients.
Pour the obtained mixture into the 750g pandoro mold and bake in a static oven at 356°F for about 35/40 minutes. Take it out, let it cool, and turn the mold over onto a plate! It was a fantastic, wonderful, delicious, and very clever idea!
