Easy and Fun Halloween Cookies

Halloween cookies are a treat I prepare every year for my son and his friends, along with the web muffins and the web tart. They are simple and fun shortcrust pastry cookies, perfect for making the spookiest holiday of the year special!
I make them with themed cookie cutters – pumpkin 🎃, bat 🦇, and ghost 👻 – and every time it’s a party in the kitchen. Even when days are unlike usual, like in that tough year of 2020, these Halloween cookies are a must.

Ingredients for Halloween cookies

  • 2 cups all-purpose flour
  • 5/8 cup sugar
  • 1/2 cup butter
  • 1 large egg
  • 1 pinch salt
  • 1 lemon zest (grated)
  • 5/8 cup hazelnut spread

How to prepare easy and fun Halloween cookies

  • In a large bowl, mix butter and sugar quickly by hand. Add the eggs, lemon zest, and a pinch of salt.
    Finally, add the flour and mix quickly (only long enough to avoid overheating the dough). Form a smooth ball, wrap it in plastic wrap, and let it rest in the fridge for a few hours, or even overnight.
    The shortcrust pastry can be easily frozen in food bags: just thaw it in the fridge to reuse.

  • Take the dough and roll it out on a lightly floured surface. With themed cookie cutters – pumpkin 🎃, bat 🦇, ghost 👻 – start creating my cookies.
    Place them on a baking sheet lined with parchment paper and bake them in a preheated static oven at 350°F for about 20 minutes.
    Once baked and cooled, fill them with hazelnut spread and they are ready for a monstrously delicious party.

Storage and useful tips

Halloween cookies keep perfectly for 2-3 days in an airtight container or a tin box, protected from humidity. They will remain as crispy and fragrant as freshly baked.

You can also prepare them in advance and fill them the next day with hazelnut cream, orange jam, or pistachio cream: all excellent variations to change flavor and color.

👉 If you want to involve the kids, have fun decorating them with colored glaze or sugar eyes for an even more monstrous effect!
