Those who know me know how much I love tart: it’s the dessert I make most often, the one that fills the house with fragrance and immediately lifts your spirits.
Among my favorites is definitely the jam tart, a timeless classic that never gets old.
But this time I wanted to create a fit version, without added sugars, designed for those who, like me, need to watch their sugar intake but don’t want to give up the pleasure of a homemade tart slice.
For the base, I used my sugar-free shortcrust pastry, crumbly and fragrant, while for the filling, I chose a sugar-free jam, sweetened only with fruit.
The result is a light, genuine, and delicious tart: perfect for breakfast, snack, or even as a simple dessert at the end of a meal.

How to Make My Fit Sugar-Free Tart
I prepare the sugar-free shortcrust pastry following my step-by-step recipe 👉 👩🍳
Once ready, I let it rest in the refrigerator for about 30 minutes, then roll it out with a rolling pin on a lightly floured surface until I get a dough of about a quarter of an inch thick.
I line a tart pan with a 9-inch diameter (I used the oval pan from Decora measuring 29 x 20 cm with a removable base), trim the excess edges, and prick the base with a fork.
I fill with the jam without added sugars, leveling it well with a spoon, then decorate the surface with the classic shortcrust pastry strips.
I bake at 350 °F (static oven) for about 25–30 minutes, until the tart is golden and fragrant.
I let it cool completely before unmolding and enjoying it.
Storage and Useful Tips
The fit sugar-free tart keeps perfectly at room temperature for 3–4 days, covered with a glass dome or closed in a cake carrier.
You can also freeze it already baked and cut into slices, wrapping each piece in plastic wrap: this way, just a few hours of thawing will suffice to enjoy it as if freshly made.
If you want a fresher and lighter effect, you can add a bit of orange zest or flavor it with natural vanilla powder.

Can I replace erythritol with another sweetener?
Yes, you can use another powdered sweetener with the same sweetening power as erythritol, keeping the same quantity as the recipe.
Avoid liquid ones, as they would make the pastry too soft and less crumbly.Can I use the pastry to make fit cookies?
Absolutely yes! Just roll out the dough to 1/5 inch thick, cut out the shapes, and bake them for about 12–15 minutes at 350°F.
