Halloween cookies are a treat I make for my son and his playmates every year, like the spider web muffins and the spider web tart. This year will be a different Halloween because 2020 is a very difficult year, we are in the middle of a pandemic for covid-sars-19, a very dangerous virus, so we will not celebrate it like in past years. That being said, even if we can’t go knocking on neighbors’ doors asking for trick or treat, my Halloween cookies will still be there. They are made of shortcrust pastry and with the cookie cutters, pumpkin🎃, bat🦇, and ghost👻, I gave them a truly monstrous shape 🧛♂️🎃👻🦇😜. Ingredients for Halloween cookies
- 2 cups all-purpose flour
- 2/3 cup sugar
- 1/2 cup butter
- 1 egg
- 1 pinch salt
- 1 lemon zest (grated)
- 2/3 cup hazelnut cream

Prepare the shortcrust pastry
In a large bowl, I put the butter and sugar and quickly knead by hand.
Then I add the eggs, lemon zest, and salt.
Finally, I add the flour and knead quickly by hand (to avoid warming the dough too much).
I make a nice ball, wrap it in plastic wrap, and let it rest in the fridge for a day.
The shortcrust pastry can be easily frozen in food bags.
I roll out the shortcrust pastry on the work surface and with the cutters I start creating the Halloween cookies. I place them on a baking sheet lined with parchment paper and bake at 350°F for 20 minutes. I take them out, let them cool, fill them with hazelnut cream, and start the party HAPPY HALLOWEEN
Storage
We can store the cookies for a couple of days in a cookie container. They will be gone soon, Susy’s word 🐾.
