The lady’s kisses cookies are too delicious, two small domes of hazelnut shortcrust pastry joined by a layer of dark chocolate, which create a perfect lady’s kiss, hence the name lady’s kisses.
These wonderful cookies are typical of the Piedmontese cuisine, originating from the city of Tortona. Initially, they were made with hazelnuts because they were more readily available in Piedmont, but they were later replaced with almonds. The recipe I am sharing with all of you is the original one with hazelnuts, but you can also use almonds, as you will still make crumbly, fragrant, and very delicious cookies like those from the pastry shop. Perfect for a snack or breakfast like the hazelnut cookies with tea or a hot chocolate!

Ingredients for lady’s kisses
- 1.19 cup all-purpose flour
- 1.5 cup hazelnut flour
- 1/2 cup butter
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 pinch salt
- as needed dark chocolate (about 70/80 g)
You’ll need
- Food processor
- Baking tray
Prepare lady’s kisses
In a Bimby or any other food processor, put the cold butter cut into chunks, the flours, sugar, vanilla extract, and a pinch of salt, activate the processor and mix everything quickly, with Bimby for 30 seconds at speed 5. Transfer the obtained dough onto a work surface and quickly compact it with your hands, giving it the shape of a loaf. Wrap it in cling film and let it rest in the refrigerator for at least an hour.
After the resting time in the fridge, take the dough and take small lumps weighing 7/8 g each, roll them in the palm of your hand, giving them the shape of small balls. Place them on the baking tray lined with parchment paper, there will be about 64 balls (which will later become 34 kisses) and put in the fridge for a couple of hours.
After resting, bake in a static oven for 15 minutes at 347°F. Once baked, take them out of the oven and let them cool. In the meantime, prepare the chocolate for the filling.
Chop the dark chocolate and melt it in a bain-marie or in the microwave and set aside.
On the flat part and in the center of the cookie, put some melted and cooled chocolate so that it does not drip, using a teaspoon, or if you prefer, with a small paper cone, then join the other cookie by pressing it well together and proceed with all the others. Our lady’s kisses are ready!
Storage and Tips
You can store them in a cool, dry place in a tin box for about 4/5 days. You can freeze the raw balls, but I do not recommend freezing them once cooked.
👉The balls must be nice and round and not flat; otherwise, they will flatten during baking.
👉The tray with the balls must be placed in the fridge to cool because this way, they will not lose their spherical shape during baking.
