The recipe for Linzer Cookies or Linzer cookies is the smaller version of the delicious Linzer torte. These cookies originate from Austria and are also famous in South Tyrol, and they are prepared during the Christmas holidays.
They are two shortbread discs made from hazelnut flour, flavored with cinnamon, vanilla, and clove powders, and filled with red currant or raspberry jam, a real treat.
Preparing them is really simple; you can make the shortbread by hand, and for a super perfect result, its rest in the refrigerator is absolutely mandatory to be able to roll it out and quickly get the discs of our cookies. Once baked and filled, you can store them tightly closed in a cookie box or pack them in delightful little boxes and give them as gifts for Christmas. I also love giving away my homemade cookies at Christmas; in fact, every year, I prepare small bags with wine rings, hazelnut tozzetti, almond cantucci and give them to my friends and relatives, and they are always very appreciated!

Ingredients for Linzer cookies
- 1 1/2 cups all-purpose flour
- 1 1/4 cups hazelnut flour
- 9 tbsp butter
- 1/2 cup brown sugar
- 1 egg (large)
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1 vanilla bean (seeds)
- pinch salt

How to prepare Linzer cookies
In a food processor or Thermomix, I put the flours, sugar, flavors, and a pinch of salt, I start the blades at low speed to mix everything.
I add the cold butter in pieces and one egg, I turn on the mixer or Thermomix and knead quickly. I transfer the dough obtained between two sheets of parchment paper and put it in the fridge to cool for at least a couple of hours.
I take the now well-chilled shortbread and roll it out to a thickness of about 1/5 inch; with the cookie cutter, I get 24 discs, and on 12, I cut out the center with a star-shaped plunger cutter.
I place the discs on the baking sheet lined with parchment paper and bake in a 340°F static mode oven for about 15 minutes.
I take them out of the oven, let them cool, fill the center with jam on the uncut discs, dust the cut-out discs with powdered sugar, and cover the disc where I placed the jam. Now I can serve these delicious cookies!
