Low carb pancakes – sugar-free are truly exceptional! A simple, quick, and tasty recipe ideal for those on a low carb or keto diet, yet great for being a bit more sugar-conscious. I confess, lately, they are my favorite breakfast, hot and topped with a square of 90% dark chocolate 😝! Absolutely a must-try. With this recipe, we prepare ten and store them in the fridge, well-sealed in an airtight container.

Ingredients
- 2 eggs
- 2 egg whites
- 1/2 cup almond flour
- 3 tbsp coconut flour
- 1 tsp erythritol
- 1 tsp coconut oil (for the pan)
Tools for Low Carb Pancakes – Sugar-Free
- Electric Mixer
- Pan – non-stick
- Spatula
Prepare Low Carb Pancakes – Sugar-Free
In a bowl, place all the ingredients and work with the electric mixer, making the batter creamy. Then slightly grease a non-stick pan with coconut oil and start cooking my pancakes with the help of a spoon.
When the bottom is well golden, flip them and finish cooking on the other side. Once cooked, stack them on top of each other and voilà, they are ready.

You can store the pancakes in an airtight container in the fridge for up to a week or you can freeze them.
Are you intolerant to one of the two flours? You can omit it and increase the one you can eat.
