Ingredients for the No-Bake Chocolate Roll
- 12 oz cocoa cookies
- 1/3 cup milk (also plant-based)
- 2 tbsp sugar
- 2 tbsp butter
- 7 oz cream cheese
- 1/4 cup sugar
- 3/4 cup shredded coconut
- 1 pod vanilla (Or 1 vial of essence)

How to Make the No-Bake Chocolate Roll
Melt the butter in the microwave. In a mixer, finely chop the chocolate cookies until they become a flour, I used all the leftover cocoa cookies I had.
In a bowl, place the chopped cookies, sugar, melted butter, and milk, and mix with a spatula until you get a soft, homogeneous dough. Store it in the fridge for about ten minutes to make it easier to work with.
Meanwhile, prepare the filling cream. In a bowl, place the cream cheese, shredded coconut, sugar, and vanilla. Mix the ingredients, and the cream is ready.
Place a sheet of parchment paper on the table and place the dough on top, cover with another sheet of parchment paper and roll it out with a rolling pin into a rectangle shape.
When the dough is well rolled out, fill it with the cream cheese mixture, leaving a little free space at the edges, and gently start rolling it up using the parchment paper. Once the roll is made, leave it in the fridge for a couple of hours, then you can cut the portions.
Storage
The no-bake chocolate roll should be stored in the fridge for a couple of days, or you can do like me, slice it and put it in the freezer ready for any occasion.
