Ingredients for 12 Peach and Yogurt Muffins

  • 2 nectarines
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup 2% milk
  • 1/4 cup sunflower oil
  • 1 egg
  • 1/2 packet baking powder
  • 1/2 cup yogurt (I use lemon)

What you’ll need to make Peach and Yogurt Muffins

  • 3 Bowls
  • Muffin tin
  • 12 Baking cups
  • Spatula
  • Hand whisk
  • Spoon

How to make Peach and Yogurt Muffins

Wash the peaches, cut them into pieces, and place them in a small bowl with lemon juice to prevent browning.
In a bowl, mix flour, baking powder, and sugar.
In another, combine milk, egg, oil, and yogurt, mixing with the hand whisk.
Pour the liquids into the bowl with the dry ingredients and mix quickly.
Add the chopped peaches (reserving some for the top) and incorporate with a spatula.
Fill the baking cups 3/4 full, decorate with some peach pieces, and bake at 350°F for 20-25 minutes.
Let cool and serve.

Storage

The muffins stay soft for 2-3 days under a cake dome or covered with plastic wrap.
