I love these quick cookies without butter because they are soft, cocoa-flavored, egg-free, butter-free, and sugar-free! They are my favorite breakfast along with light oatmeal tartlets, so tasty and crumbly, perfect for those like me who need to limit sugar and lactose intake, and for those who love light, wholesome, and vegan recipes!

Ingredients for Quick Cookies Without Butter
- 3/4 cup hazelnut flour
- 1/2 cup oat flour (gluten-free)
- 1/4 cup unsweetened cocoa powder (gluten-free and lactose-free)
- 2 tbsp coconut oil
- 1/2 tsp gluten-free baking powder
- 3 drops sweetener (optional)
How to Make Quick Cookies Without Butter
In a bowl, pour the apple puree, sweetener, and coconut oil, and mix with a spatula to combine everything. Then, incorporate the hazelnut flour, oat flour, unsweetened cocoa, and baking powder, continuously working with the spatula to make the mixture uniform.
Preheat the oven to 340°F. Prepare the baking tray lined with parchment paper or a perforated mat, and with the help of a spoon, scoop some dough forming it into a ball and place it on the tray.
Once all the cookies are made, press them slightly and bake at 340°F for about 15/18 minutes. Once baked, let them cool completely before tasting; they are amazing!
Tips
You can replace hazelnut flour with almond, walnut, or pistachio flour. You may omit the sweetener, and if you prefer, you can make homemade apple puree by simply blending 2 apples.
