Ingredients
- 1 1/2 cups all-purpose flour
- 9 oz ricotta
- 1/4 cup sugar
- 1 egg
- 1 orange peel (grated)
- Half packet baking powder
- 2 cups peanut oil

Steps
In a bowl, I mix the ricotta with sugar using a pastry spatula, then add the egg and grated orange peel to make a creamy dough. Next, I incorporate the flour and baking powder to get a homogeneous dough, cover it with plastic wrap, and let it rest in the fridge for 10/15 minutes.
I heat the peanut oil in a high pan. I scoop the dough with a spoon to form classic balls. I start frying the ricotta castagnole until golden, drain them well with a slotted spoon, and immediately coat them in sugar. Now it’s time to taste them while they’re still warm!
