- 2 Golden Delicious apples (medium size)
- 2 cups all-purpose flour
- 1/2 cup sugar
- 3/4 cup partially skimmed milk
- 3 tbsp butter
- 2 eggs
- 1 packet baking powder
- 1 orange (juiced)
- 1 orange zest (grated)

Making Apple and Cinnamon Muffins
1. Preheat the oven to 425°F.
2. Peel the apples, core them, and cut them into small pieces. Place them in a bowl with the orange juice and set aside.
3. Melt the butter in a double boiler or microwave, being careful not to burn it, and let it cool.
4. In a bowl, combine flour, baking powder, grated orange zest, cinnamon, and sugar. Mix with a spatula.
5. In another bowl, lightly beat the eggs with a whisk, then add milk and cooled melted butter.
6. Combine the two mixtures and also add the apples. Quickly mix the batter.
7. Fill the liners with two tablespoons of batter up to ¾ of their capacity.
8. Bake in the oven at 425°F for 15–20 minutes.
Once done, let the muffins cool in the turned-off oven with the door ajar for 5 minutes. Then transfer them to a wire rack.
Storage and Useful Tips
The apple and cinnamon muffins stay soft for 2–3 days under a cake dome or in an airtight container at room temperature. If you want to keep them longer, you can freeze them once cooled: when needed, just let them thaw at room temperature or slightly warm them in the oven to regain their softness.
